6 medium peeled sweet potatoes
1 stick butter
2 cups granulated sugar
1 teaspoon ground nutmeg
1 teaspoon cinnamon
1/4 teaspoon ground ginger
Salt to taste
2 tablespoons water
1 teaspoon vanilla

Directions:
Directions:
Slice sweet potatoes into slices or wedges, about ¼ inch thick.

Melt butter over medium heat in a large skillet and add sweet potato slices to the skillet. Mix the sugar, cinnamon, nutmeg, ginger and salt with the water and pour over the sweet potatoes. Stir gently, reduce heat to low, and then cover with a lid and cook until the sweet potatoes are fork tender, about 1 hour. Remove from heat and stir in vanilla.
