1 C flour
1/4 C sugar
1/4 C ground toasted almonds
1/4C butter
1 egg yolk beaten
2-3 Tbs water
1 4oz instant cheesecake pudding mix
1 C evaporated milk
2 tsp almond
1/2 tsp vanilla
1/3 strawberry preserves
Directions:
Directions:
Stir together the flour, sugar, and almonds. With a pastry blender cut in butter until pieces are pea size. Mix together yolk and water and gradually add to flour mix and combine. If necessary add enough additional water to make a dough that starts to cling. Gently knead until smooth. Chill 1hour or until dough is easy to handle.
Preheat oven to 350. Divide dough into 24 balls and press into the bottoms and up the sides of a mini muffin tin. Bake 15 minutes. Cool completely.
Combine pudding mix, milk and extracts and beat til fluffy about 2minutes. Spoon into each shell and chill 2-24 hours. When ready to serve place 1/2tsp preserves on top and garnish with a slice of strawberry and/or sliced almonds.
