Ingredients: 2 cups cooked corned beef shredded (I used leftover from corned beef and cabbage that was cooked with the spice packet it comes with) 2 cups shredded cabbage (I used leftover from corned beef and cabbage that was cooked with the spice packet it comes with) 8 slices swiss cheese 20 egg roll wrappers Oil for frying Russian Sauce (Recipe follows) Salt and pepper to taste 2 beaten eggs

Directions: |
Directions:Put your corned beef in cabbage in a bowl and combine. Season with salt and pepper. Take your cheese and lay the slices on top of each other. Cut them all into three strips. Put two tbsp beef and cabbage mixture onto and egg roll and top with a strip of cheese. Line the outside of the wrapper with your egg wash. Roll the egg rolls. Fry until golden brown and serve with russian sauce. |

Ingredients: 2 cups mayonaise 1 tbsp finely chopped yellow onion 1 tsp Cholula hot sauce 1/4 cup Sambal Oelek ground fresh chili paste 1/2 cup ketchup A few dashes of worcestershire sauce 1/4 tsp paprika 1 tbsp sugar 2 ounces of red wine vinegar Salt, pepper and garlic salt to taste

Notes: I love corned beef and I love egg rolls. After St. Patrick's day I like to make these and freeze them sometimes before I cook them.
