Shrimp Egg Rolls Recipe

Ingredients: 1/2 bag of finely diced broccoli and cauliflower mixture 1/2 head of cabbage shredded finely 1/2 pound raw/cleaned/de-veined shrimp 1 tsp minced ginger 3 cloves minced garlic 1 tbsp olive oil salt and pepper to taste 20 egg roll wrappers 1/2 bottle vegetable oil for frying 2 eggs beaten for egg roll wrappers

Directions:Fry your broccoli, cauliflower and cabbage mixture until soft in the olive oil. Add your garlic and ginger and fry about 5 minutes until fragrant. Season the mixture with salt and pepper. Remove and let cool in a bowl. Add some more oil to the pan and add your shrimp. Cook until the shrimp turns a reddish pink. Season. Chop your shrimp up into small pieces. Combine with the vegetable mixture. Add two tablespoons mixture to each egg roll. Use the eggs to seal the edges of the wrappers. Heat your oil in a dutch oven or you can use your deep fryer if you have one. You'll know the oil is ready if you put your fingers under water and splash a tiny bit of water into the oil and it pops. Be careful. You don't want the oil on high. Fry the egg rolls until golden brown and enjoy! |
