12 eggs beaten
1/4 cup half and half
1/2 stick butter
4 cups washed spinach
1 cup chopped mushrooms
1/2 cup finely diced red pepper
2 cloves minced garlic
2 cups mozzarella cheese
1 cup grated parmesan
Freshly grated parmesan for topping (optional)
1 cup cherry tomatoes chopped in half
Sliced green onions
Sriracha mayonnaise (optional)
Salt, pepper and garlic salt to taste

Directions:
Directions:
Heat your butter in a pan on medium until melted. Sautee your red pepper and mushrooms for about 4 minutes. Add your eggs and half and half. Scramble until almost done. Add your cheeses and garlic. Add your spinach and cook until evenly distributed in the eggs. Add your garlic. I like to plate the bottom of my plate with siracha mayo but that is totally up to you. I then added the eggs, top with the green onion, tomatoes and freshly grated parmesan.

I dedicate this recipe to my little brother Eugene Rumpke. He is a vegetarian and loves spicy eggs. His dad used to call him runior instead of junior (they have the same name) and I came up with calling him Runy and it just stuck through his childhood.
