Directions:Note: For this recipe it depends on how many pieces of bread you are making for how many ingredients you need.
You want just enough cheese and chives for each piece of bread.
Use medium heat if making in a pan, if on an electric grill heat to 350 degrees. In your bread, pull out a small hole in the middle. Butter both sides of your bread. Place the pieces on grill and lightly toast on one side. Flip the bread over and crack an egg in each hole. Add salt and pepper to your liking. Cook on one side for about 4 minutes. Carefully flip your toast over with a spatula and be careful not to break your yolk. Once bread is flipped, continue cooking and sprinkle cheese on top and as many chives to your liking. Once the cheese is melted you are done! |

Notes: This is a really good southern breakfast dish, although good at any time during the day if you’re a breakfast for dinner kind of person!
This was my father Paul David Reid's recipe and I added my twist by adding the cheese and chives. He really loved George Strait. Some of my memories of being at his house was always music going. He liked country, rock and roll and motown.
