1lb ground beef
2 acorn squash cut in half seeds removed
½ cup onion chopped
1 can black olives chopped
3 cloves garlic minced
½ cup cheddar cheese shredded
1 egg beaten
½ cup heavy whipping cream
Salt and Pepper to taste
2 Tbsp melted butter
Grated parmesan cheese

Preheat oven the 350 degrees. Spread the melted butter over the squash (not the shell part). Salt and pepper the squash and put cut side down on a baking dish and bake for 1 hour until it’s soft. In the meantime brown your hamburger meat and add your garlic onions and olives. In a bowl add your beaten egg with ¼ of your cheese and add your whipping cream and mix together. Once your meat is done add this mixture of cream, egg and cheese to your meat mixture and let sit for a few minutes to thicken. Add seasonings to your liking. I like to add chili powder to a lot of my dishes and garlic powder but it’s up to you. Stir your mixture into your squash and top with a sprinkle of grated parmesan cheese. Then top with the rest of your cheddar and bake for 30 minutes. Take out to cool and enjoy!
