2 tbsp. butter
½ cup chopped onions
2 cups chicken broth (sodium free or reduced)
3½ cups cauliflower (cut-up)
2½ cups milk
¼ cup flour
1½ cups shredded cheese
salt & pepper to taste

Directions:
Directions:
Melt butter then add chopped onions and cook for 5-10 minutes. Add broth and chopped cauliflower and cook on medium high for about 20 minutes. Reduce heat to medium. Add flour to milk and whisk until smooth then add to cauliflower and warm on medium, stirring often for about 15 minutes. Add cheese then salt and pepper to taste. Stir.
