250 g. small tubular pasta or elbow macaroni
125 g. pepperoni, cut up
1 red onion, chopped
1 large green pepper, chopped
3 ripe tomatoes, cut up
⅓ cup vegetable oil
2 tbsp. red wine vinegar
1 large clove garlic
½ tsp. each of Italian seasoning & salt
pepper to taste
½ cup Parmesan cheese

Directions:
Directions:
Cook pasta in large pot of salted water for 10 - 12 minutes. Prepare dressing by whisking oil with vinegar, garlic and seasonings in a large bowl. As soon as pasta is cooked, drain well but DO NOT rinse. Immediately add to dressing and stir until coated. Stir in remaining ingredients and refrigerate at least 2 hours before serving so flavours can blend.
