¼ cup slivered almonds
¼ head romaine lettuce
2 medium stalks celery
2 green onions with tops, sliced thinly
1 can mandarin oranges, drained

Dressing:
¼ cup light olive oil, 1 tbsp. cider vinegar
2 tbsp. sugar, 1 tbsp. fresh parsley
½ tsp. salt, dash ground pepper
dash tobasco

Directions:

Mix dressing in a jar and shake to combine. Place in fridge to allow flavours to blend. Toss salad in a large bowl. Just before serving, toss in the dressing.

Bill and I and the boys took a trip to the East Coast a few years ago where we met up with John and Dana and their kids for a couple of days. On Cape Breton Island we had this delicious salad and were lucky enough to get the recipe.
