Carrot Cake


Ingredients:

3 cups Grated Carrots
2 cups Flour
2 cups of Sugar
2 tsp Baking Soda
1 tsp Salt
2 tsp Cinnamon
1-1/2 Cups Cooking Oil
4 Eggs
2 tsp Vanilla Extract
1 cup Nuts

Directions:
Directions:
Mix together flour, sugar, baking soda, salt, and cinnamon.
Add cooking oil, eggs, carrots and vanilla extract.
Add nuts.
Bake in two 9 inch cake pans at 350º
 

Carrot Cake Icing


Ingredients:

1 Large Package Cream Cheese
1/2 Stick Margarine
1 Box Confectioners Sugar
2 tsp Vanilla Extract

Directions:

Cream together cream cheese, margarine, confectioners sugar and vanilla extract.
Spread between layers and on top.

This is my grandmother, Wilma Randall's, carrot cake recipe. This was always a hit at family events and holidays.
