"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Peel the thin layer of membrane skin off the bone side of the ribs.
Season the ribs with Lawry's or Cookies Seasoning or your favorite one.
Turn on your Smoker Grill to the Smoke Setting.
Put the ribs on the Smoker with the bones down and smoke for 4½ to 5 hours.
Spray apple juice and rub butter on the ribs every ½ hour to keep the ribs moist.
20 minutes before taking ribs off the smoker, turn up the smoker to 250º to 300º to make them a little crispy.
Spread the barbeque sauce on the ribs 10 minutes before taking them off the smoker.
My smoker will hold 5 racks of ribs if having a big get together.
