4 Egg Roll Wrappers
2 ½ tsp Oive Oil
Finely minced Rosemary, or any herb....fresh or dried
Fine Sea Salt or Kosher Salt

Directions:
Line a baking sheet with parchment paper. On a cutting board, layer egg rolls in a stack. Cut in half. Cut each half into 3 rectangles (a total of 24 pieces) .Drizzle olive oil on parchment paper and rub with fingers to cover surface. Lay each single rectangle on sheet and flip to expose oiled side up. Rub to cover each piece completely with the oil. Sprinkle with herbs and sparingly with salt. Bake at 375º for 5-7 minutes, until lightly golden. Watch closely. These go from pale to golden very quickly, and continue to brown out of the oven. Remove quickly to a cooling rack. When cool, store in a sealed container or large ziplock bag.

Even though a sprinkling of salt looks nice on these crackers, I have begun to omit it. The egg rolls are fairly salty (quite a lot of sodium), and I find a sprinkling of salt makes these too salty. However, if you love salt, sprinkle sparingly as the recipe states. These cracker take about 15 minutes to prepare start to finish (ridiculously simple!), yet you will appear to be so clever!!
