2 large parsley bunches (minced)
1 large onion (minced)
4 clove garlic (minced)
1 cup instant mashed potato
1 cup vegetable oil (for frying)
1 tsp dried mint
1 tsp black pepper
2 tsp salt for tasting
1 tsp all spice
1/4 tsp baking powder
8 eggs

Directions:

Mix eggs in a large mixing bowl with salt, black pepper, all spice, baking powder and dried mint. Make sure they are mixed together very well.

Use a food processor to mince onion, parsley, garlic and then add to the egg batter from above. Stir in the instant mashed potatoes and mix very well.

Preheat oven on 500 degrees

Use a medium baking pan and put the oil in the pan and spread it around. Place the pan with the oil in the oven for a few minutes to heat the oil. Then take the pan back out and pour the mixture into the pan and bake on the middle rack in the oven for 5 minutes. Lower the heat to 400 degrees and cook for 10 to 15 minutes until golden brown.

Cut into small squares and serve hot or cold.
