3, or more, medium yams or sweet potatoes
4 tart apples(Granny Smith?), peeled & sliced
¾ cup brown sugar
½ cup butter, melted
Cinnamon

May substitue a 2.5 pound can of yams, drained. (Only if absolutely necessary please.)

1. Prepare Ingredients
Place yams/sweet potatoes in a large pot, add a bit of salt and cover with water. Bring to a rolling boil, cover, and cook for about 15 minutes or until just tender on the outside but slightly resistant in the center when pierced with a knife. Peel apples, core and cut into ⅛ - ¼-inch slices.

2. Build the Layers
Preheat oven to 350º
Butter a shallow 9-10 inch baking dish. Place a layer of apples, then sprinkle with brown sugar, cinnamon and butter. Place a layer of yams/sweet potatoes, then sprinkle with brown sugar, cinnamon and butter. Continue building layers, using all of the yams/sweet potatoes and apples, sprinkling brown sugar, cinnamon and butter on each layer.

3. Bake
Bake covered for 30 minutes. Uncover and bake for an additional 40 minutes. Cover and bake for another 20-30 minutes, if necessary, until apples are soft. Spoon or baste juice over top between each baking period.
