6 c. white rice flour, preferably Bob's Red Mill
3 c. tapioca flour, preferably Shiloh Farms
1½ c. potato starch, preferably Bob's Red Mill
1 T. salt
2 T. xanthum gum, preferably Bob's Red Mill

In a large bowl, whisk together all ingredients. Transfer to an airtight container and store in a cool, dry place or in the refrigerator.
