6 onions, chopped in food processor
8 cucumbers with peeling, chopped in food processor
2 red peppers, chopped in food processor
3½ Tbsp Pickling Salt
( NO WATER)

Dressing:
3 cups water
½ cup flour
1 tsp turmeric
1 tsp celery seed
1 tsp mustard seed
3 cups white vinegar
green food coloring(add to your liking)

Directions:
Directions:
Cut cucumbers length wise and remove seeds.
Put onions, cucumbers and red peppers through food grinder into bowl.
Mix in salt. Cover and let stand on counter overnight.
Drain in the morning.

Dressing: Stir first 5 ingredients together in a large pot.
Mix in vinegar. Cook over medium high heat, and stir until it boils and thickens.
Add vegetables. Return to a boil. Cook for 30 minutes stirring occasionally.
Add food coloring to your liking to get that green relish look.
Pour into hot sterilized jars to within ¼ inch of top.

This is a relish I got from wendy many years ago. She wanted to make hotdog relish,but when she did the recipe,she made the sauce from a totally different recipe. It turned out great so this is now how we make it.
