500g / 1lb courgettes
50g / 2oz ghee or 60ml / 2 fl oz cooking oil
1 medium onion
1 tsp chilli powder
1 tsp salt
½ tsp black pepper
2 tsp desiccated coconut

Directions:
Directions:
1. Wash the courgettes well and top and tail them. Then, cut them into slices about ½ - 1 cm / ¼ - ½ inch thick.

2. Heat the ghee or cooking oil in a frying pan and gently fry the courgette slices for a minute or so and place them to one side. If the courgettes are particularly dry, you may have to add a little more ghee or cooking oil.

3. Peel and slice the onion and fry in the remaining ghee. Once the onions are soft, add the spices, salt and black pepper.

4. Then cook the mixture for 2-3 minutes, adding the courgette slices and tossing them well to ensure that they are fully coated.

5. Lightly sprinkle the desiccated coconut over the dish, cook for a further half minute and serve.
