1 tablespoon olive oil
1 shallot or red onion minced
2 cloves of garlic, minced
1 medium red bell pepper diced about (1 cup)
1 medium yellow bell pepper diced about (1 cup)
(You can also use green pepper with, or instead if desired)
1 cup of uncooked quinoa, rinsed
2 cups of chicken or vegetable broth
2 tablespoons of fresh parsley
(Can serve above cold as a salad, or warm)

If you want a complete meal, add the meat below and serve warm.

1 lb. ground meat (turkey or hamburger) – optional

Heat oil in a 2-quart saucepan over medium-high heat. Add the shallot or red onion, and garlic and cook for 2 minutes, stirring occasionally. Add the peppers and quinoa and cook for 2 minutes, stirring occasionally.

Stir in the broth and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until the quinoa is tender and the liquid is absorbed. Stir in the parsley. Season as desired.

If meat is used:
As the above is cooking, cook up the ground meat in another pan. Once both are done, add the meat to the other mixture for a full meal.
