3 egg whites
6 T. sugar
1/2 c. water
1 T. corn starch
Dash of salt

Directions:

Combine sugar and corn starch with 1/2 c. water.
Cook over low heat until clear and cool slightly
(You can sit the pan in cool water to hurry it along)
Beat egg whites until foamy
Add sugar mixture and beat until stiff peaks form

This makes a beautiful high meringue that doesn't fall or weep. I got the recipe from Mary Clark. She made 9 pies for a day at the sale barn.
