Grandma Shott's lasagna Recipe

2 lb ground beef
1 lb ground Italian sausage (optional)
½ cup chopped onion
2 cloves garlic, minced
1 ½ tsp salt
¼ tsp pepper
2 tsp oregano
1 tbsp parsley
1 can (28 oz) tomatoes
12 oz tomato paste
½ lb lasagna noodles
1 carton ricotta cheese (around 16 oz)
1 lb mozzarella cheese (either sliced or shredded works easiest)
1 cup Parmesan cheese

Brown the meat with onions and garlic. Add salt, pepper, oregano, parsley, tomatoes, and tomato paste. Cover and simmer 30 minutes. Cook lasagna noodles in boiling water with 1 tbsp olive oil and 2 tbsp salt. Drain.

Make first meat sauce layer THIN!
In 13 x 9 pan or lasagna pan, layer meat sauce, noodles, 1/2 carton ricotta cheese, 1/2 lb mozzarella cheese, and 1/2 cup Parmesan cheese. Repeat layers. Top with remaining meat sauce and sprinkle with additional Parmesan cheese.

You can freeze here or bake at 350 º F for 30 minutes.

If you froze, thaw and bake at least 40 minutes at 350 ºF.

When I make this, I go ahead and double recipe. I always freeze one and bake one. 2 meals with one prep time!
