For the Loaf:
3oz coconut
8 fl oz of milk - split
4oz butter
8oz castor sugar
1 tbsp grated orange rind
2 eggs
6oz self-raising flour

For the Orange icing:
8oz icing sugar
1 tsp soft butter
1½ tbsp orange juice

For the Loaf:
1. Combine coconut and 4 fl oz of milk in a bowl and leave for one hour.
2. Preheat oven to 375ºF.
3. Cream butter, sugar and orange rind until light and fluffy. Add eggs one at a time, beating thoroughly after each edition. Stir in flour and coconut mixture and remaining milk.
4. Pour mixture into a greased two pound loaf tin or round high 7" tin and bake for 45-50 minutes until ready. Remove from oven and allow loaf to cool in tin for five minutes. Turn out to cool on a wire rack.

For the Orange icing
1. Beat all ingredients together until smooth
2. Spread evenly over cake.
