125g butter
1 cup sugar
Rind of 1 orange, grated
Generous pinch of ground cinnamon, nutmeg and allspice.
2 eggs
1 large carrot, grated (about ⅔ cup)
60g unblanched almonds, finely chopped
1¼ plain flour
1½ tsp baking powder
pinch salt
¼ cup warm water

Directions:

1. Beat the butter until it is light and fluffy, then add the sugar and continue mixing for a few minutes.

2. Add the spices and orange rind, then the eggs one at a time and beat until well mixed.

3. Add the carrot and nuts and then the flour, baking powder and salt.

4. Pour in the warm water a little bit at a time, until the mixture is smooth. Don't over mix.

5. Grease and flour a 20cm square cake tin, pour in mixture and bake in a preheated oven at 350ºF for 35 minutes or until cake shrinks away from the sides of tin. Cool 10 minutes and turn out on wire rack to cool completely.
