1 lb red kidney beans
1 lb smoked sausage, chopped
1 onion, chopped
1 bell pepper, chopped
2 T thyme, basil
3 T cajun seasoning
2 bay leaves

1 cup rice
2¼ water

Directions:
Directions:
Soak red beans over night in large soup pot

Drain beans.
Saute sausage, onions, bell pepper in soup pot.
Add beans and cover with water
Cook on low heat for 3-4 hours until beans are soft

Cook rice.

Serve beans on top of rice.

This is a traditional Monday meal in New Orleans. That was traditionally wash day, so as the fire was hot all day for washing, a pot of beans would be put on the fire to cook all day.

We usually serve this with patty sausage.
