3 lb. beef rum chuck or stew (1-2" cubes)
1 large onion
3 whole allspice
1 bay leaf
1/4 c. vinegar
1 1/2 c. water
2 tbsp. flour
Dash of pepper

Directions:
Directions:
Place beef pieces in a large frying pan and brown over medium/high heat. Sprinkle with 2 tbsp. flour and add the onion. Turn pieces to brown well on all sides. Transfer to a stewing kettle. Then add 1/2 c. water to the remainder in the frying pan, scrape and stir until pourable. Add to kettle. Add vinegar, bay leaf, allspice, pepper, and 1 c. water.

Cover tightly and stew slowly for 3-4 hours. Stir occasionally to keep from sticking, and add more liquid if needed (water or beer). If too liquid, thicken with flour or broken gingersnaps.
