1 large onion
4 cloves garlic
10 oz Rotel
1 t dried thyme
2 t Tony Chachere seasoning or other cajun seasoning blend (we like Wild Tree cajun seasoning)
1 lb pork butt or beef meat cut into 2 inch chunks

For finishing:
1/2 c heavy whipping cream
4-6 c chopped baby spinach

Directions:
Directions:
1. Blend together onion, garlic and Rotel.
2. Pour into the Instant Pot, add cajun seasoning mix.
3. Add in the pork/beef cubes and stir well.
4. Close the pot and seal. Cook on MEAT setting for 20 min. Allow it to release pressure naturally for 10 minutes and then release all remaining pressure.
5. Turn the Instant Pot to Saute. When the stew begins to boil, add the cream and stir well.
6. Then add the spinach leaves and cook until wilted and serve.

To make this with chicken, reduce cooking time to 10 minutes for thighs and 12-14 minutes for chicken breasts depending on thickness. Cut up the chicken after cooking.
