1 package corn tortillas
1 Large can black beans, drained and rinsed
1 cup frozen corn, thawed
2 cans enchilada sauce
shredded cheese

Directions:
Directions:
Preheat oven to 350.
Spread a thin layer of enchilada sauce in the bottom of a 9x13 pan.
Place a layer of tortillas on top, overlapping if necessary.
Pour 1/3 of the enchilada sauce over the tortillas.
Top with half the black beans and corn.
Cover with a layer of cheese.
Repeat, using the rest of the beans and corn and top with more cheese.
Place a final layer of tortillas, and top with sauce and cheese.
Bake for 35 to 45 minutes or until set.
Serve with sour cream, guacamole, etc.
