6 cups baking apples (I like fuji & gala - use 2 kinds of apples)
2 Tbsp water
1 Tbsp lemon juice
3/4 cup sugar
1/2 cup dark brown sugar
3 Tbsp all-purpose flour
1 1/2 tsp ground cinnamon
4 shakes ground nutmeg
2 shakes ground ginger
1/8 tsp or less salt
2 - 9 inch pie crusts (Pillsbury; don't use great value brand)

In a large saucepan, combine apples, water & lemon juice; cook over medium-low heat until the apples are tender. Remove from heat to cool and drain.

In a large bowl, combine sugars, flour, cinnamon, nutmeg, ginger and salt; add apples and toss to coat.

Place bottom crust in a pie plate (glass or ceramic). Sprinkle some flour on pie crust; enough to thinly coat. This will help keep bottom crust from getting soggy. Add apple mixture and cover with top pastry, seal and flute edges. Cut slits in top crust. Sprinkle additional brown & white sugar on top of crust.

Bake at 450º for 10 minutes. Reduce heat to 350º and bake 35-45 minutes or until golden brown. If you have a pie crust shield, use it for about 75% of the baking time.
