3 T butter
2 lbs. beef, cut into 1 inch squares
2 medium onions, peeled and chopped
½ tsp. celery salt
2 T parsley, minced, opt
6 c. water
6 beef bouillon cubes
3 carrots, cut into small pieces
3 stalks celery, cut into small pieces
3 med. potatoes, diced
3 T. flour
I pkg. (10 oz.) frozen peas

Melt the butter in a large pot and brown the beef. Add the onions and saute until golden. Dissolve the 6 bouillon cubes in the 6 cups of water. Add half the broth to the beef and onions and add the celery salt and parsley. Simmer for 1 hour, stirring ocasionally. Add the rest of the broth and simmer one more hour. Add carrots, celery and potatoes and simmer a half hour longer. Make a thin paste of flour and water; stir until smooth. Add the flour mixture to the stew and blend well. Let the stew thicken; increasing water or flour as to the consistency desired. Add the frozen peas just before serving.
