1 cup sifted flour
2 Tbl sugar
1/2 tsp salt
1 cup milk
3 eggs
butter for frying

Directions:
Directions:
In a bowl, sift flour, sugar and salt. Gradually beat in the combined milk and eggs, stirring until smooth. Strain. Heat the skillet (5 inch). Grease the bottom with butter, using a paper napkin. Pour three tablespoons of batter at a time into skillet, tilting the pan on all sides so that the batter spreads out to bottom edge of the pan. The pancake browns very quickly Turn pancake gently.

I (Diane) remember Pop making us crepes at least once. He really enjoyed cooking and liked making something for his children that he thought they would enjoy. He also used to make us home-made donuts, that he deep-fried and then we would put them into a paper bag, once they cooled a little bit, and shook them with confectioners sugar. They were a little heavy, but great!
