8 oz shallots (about 3 large)
1 1/2 C quality red wine vinegar
1 T balsamic vinegar
1/2 C sugar
6 sprigs fresh thyme
1 bay leaf
1/4 tsp sea salt
1/4 tsp red chili pepper flakes

Directions:
Directions:
Skin shallots and slice thin, about 1/8”. Makes about 2 C. Place the vinegar and sugar in a medium saucepan and bring to a boil. Once boiling add thyme, bay leaf, salt, pepper flakes and shallots. Stir well and remove from heat. Let cool to room temperature then transfer to a glass jar and refrigerate at least 24 hours and up to 1 month.

Makes a great condiment for eggs, sandwiches and just about anything you would put onions on. These are milder and more flavorful than onions.
