Mashed potatoes (slightly lumpy)
1 1/2 lb. ground beef
3/4 cup chopped onion
3/4 cup chopped celery
poultry seasoning, to taste
salt & pepper, to taste

Directions:
Directions:
Brown beef, onions and celery. Add to potatoes. Add salt, pepper, and poultry seasoning to taste. Lightly stuff turkey.

Pop used to make this stuffing, to stuff the turkey at Thanksgiving. It was a "Canadian French" stuffing recipe. All of us kids loved this stuffing, until we realized there was bread stuffing, then we all broke out of the tradition, and tried other dressings. We wanted to keep this tradition alive, though, and Joan got the recipe before it was lost forever, and still makes it occasionally for special holidays.
