2 1/2 C sliced zucchini
1 1/2 C (1 inch square) cut red pepper
1 1/2 C sliced yellow squash
1 C sliced green beans (about 1/4 lb)
1 C sliced carrot
3 T balsamic vinegar
1 1/2 T olive oil
1/2 t of each of the following:

dried oregano
dried tarragon
dried thyme
dried parsely
dried roesemary

1/4 t salt
1/4 t pepper
4 garlic cloves thinly sliced
2 medium onions, peeled and quartered

Preheat oven to 425
Place all ingredients in 13 X 9-inch baking dish; stir well to combine
Cover and bake for 40 minutes or until vegetables are tender
