1 15 oz. can black beans (drained, rinsed)
1/2 c. quick oats
2 T cocoa powder
1/4 tsp. salt
1/2 tsp. baking powder
1/3 cup honey
1/4 cup coconut oil
2 tsp. vanilla extract
1 egg
1/2 cup chocolate chips

Preheat oven to 350 F. Combine all ingredients except chocolate chips in a good food processor (or blender, but may affect texture) and blend until completely smooth. (Batter will be thicker, but if it seems too thick, add a splash of milk). Stir in the chips, then pour into a greased 8×8 in pan OR dollop into cupcake tin. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up!

Black bean brownies sound disgusting, but trust me. I have them on hand all the time! Keep them in the refrigerator and the texture gets that much better. I like to spread peanut butter on top right before eating one! I prefer to bake them in a cupcake tin, so I don't have to cut them. #trythings!
