2 lbs beef chuck, 1.5" - 2" cubes
5 carrots, roughly chopped
5 stalks of celery, roughly chopped
1 medium yellow onion, roughly chopped
2 lbs russet potatoes, 1.5"-2" cubes
1.5 cup red wine
1.5 cup beef stock
2 tbsp canola oil
2 tbsp unsalted butter
3 cloves garlic
3 sprigs thyme
1 bay leaf
1 container baby bella mushrooms
salt and pepper to taste

1. Pre-heat stainless steel skillet on medium high. Add oil and bring to temp
2. Season beef cubes liberally with salt and pepper
3. Sear beef cubes about 2 minutes on each side, or until crust forms
4. Remove beef from heat, add to crock pot
5. Add half of the onion, half of the celery, half of the onions and half of the mushrooms to the pan and sautee, scraping off the fond from the bottom of the pan.
6. Once the vegetables are fragrant (3-4 minutes), add the diced garlic and butter and continue to cook.
7. Add 1/2 cup wine and beef stock each to pan, continuing to scrape fond. Let liquid reduce by half.
8. Combine all ingredients into the crockpot.
9. Turn crockpot on low and cook for 8 hours or until beef and potatoes are fork tender.
10. Serve immediately with warm crusty bread and butter!

It's worth it to sautee the beef before throwing it in the pan - the reduced liquids + fond + sauteed mirepoix makes the flavors so rich and deep. Perfect for a cold winter Sunday!
