Ingredients: Soak together: 1 pkg. yeast 1 tsp. sugar ¼ cup warm water
Heat 2 cups milk until hot but not boiling ADD: ½ cup lard or shortening ¾ cup sugar ½ tsp. mace 1 tsp. salt Blend well then add 3 cups flour and beat well. Add yeast and blend then 2 eggs which have been beaten Blend and add rest of flour (3 - 4 cups) a little at a time. Not to much as kolache are much lighter when dough is left slightly sticky.

Directions:Let rise in a warm place. Punch down and make into small buns. Place in a pan and let rise. When doubled stretch each bun into a circle. Place filling of your choice in center, then pull 2 corners (opposite) and pinch together. Bring 1 corner over the top of the other and pinch together. Grease tops and let rise for about 20 minutes. Place in a 350º oven and bake for 25 minutes. |

Notes: The above are what I call Grandma Varuska Kolache. Grandma Bouza Kolache were open face. She placed the buns farther apart and then when they had risen, stretched an indentation in each bun and put the filling in it. Place buns close together in a 9 x 13 pan. When filled place close together. The Kolaches will be deeper with a thinner outer base and the filling will be spread nicer. TOOK ME YEARS TO DISCOVER THIS!
