2 5-6 Lb. pork butt roast
2 large glasses of dry white wine
1/2 Tsp pepper per pound
1 Tsp salt per pound
1 T. minced garlic and juices per pound
1 Tsp ground clove per pound

Preparing the Pork Butts,
Trim and debone The pork and cut into 1-2 inch chunks.Placing the chunks in a plastic non-reactive container or large freezer bag.
mix all the dry seasoning together. Blend the dry seasoning into the pork and mix thoroughly.
In a skillet over medium heat add the wine and heat until the alcohol cooks off and begins to steam. Add the garlic and juices and reduce heat. 1-2 minutes. remove and cool completely. Add to the meat and mix thoroughly.
refrigerate for twelve and up to 24-36 hours.
take a sample piece and cook to taste and adjust seasoning if needed.
Using a meat grinder grind on.e time through on course setting. Grind a second time with a finer setting. taste and adjust seasoning.either bag in bulk 1 Lb. bags or make links with Pig casing.

This sausage, when executed correctly, is like candy. My dad had the touch and I am still refining as my brother Bill and I had to interpret as dad used his fingers as measuring devices.
I remember once at camp it was -22 below zero and we were lying in bed. Gary Goroni a friend asked if it was too cold out to hunt. I said let's ask Rudy. We made our way downstairs and the coffee was on and Rudy was busy getting things ready in the kitchen.Hey Rudy, What was the coldest weather you ever hunted in? He shot back immediately without hesitation...-35 below, we had a ham in the trunk and when it was time for lunch it was frozen. We hunted that morning but not for long. When we returned there was this large bowl of sausage on the table. We will never it all Rudy. Several hours later and a few beers and wines we finished. Who cares about hunting when there is good food.
