* 1 cup water
* 1 stick salted butter, cut into pieces for easy melting
* 1 teaspoon vanilla
* 1/2 teaspoon salt
* 2 table spoons granulated sugar
* 1 cup flour
* 4 large eggs

* 1 1/2 cups heavy cream
* 3 tablespoons powdered sugar
* 1 tsp vanilla
* 1 tablespoon chocolate sauce (optional, if you want chocolate cream)

* For Pastries
* 1. Place water, butter, sugar, salt, and vanilla in a sauce pan over medium heat until butter melts.
* 2. Reduce heat to medium and add all of flour. Stirring continuously and quickly. Keep stirring until the batter doesn't stick to the sides and all liquid is soaked up (usually about 2-3 minutes).
* 3. Place dough in bowl to cool for about 5 minutes
* 4. Add eggs one at a time to let the dough absorb the eggs. When the dough absorbs the egg you can add the next egg.
* 5. Preheat oven to 425F. Line cookie sheet with parchment paper or lightly grease cookie sheet.
* 6. Using either a pastry bag or spoon make the dough into 2 inch round mounds and making sure they are about 2 inches apart.
* 7. Place in oven and turn heat up to 450F for 10 minutes. During this time do not open the oven.
* 8. Then turn down heat to 350F for 10-15 minutes longer, checking after 10 minutes to see if they are golden brown and crispy on the outside.
* 9. When the pastry is golden brown and crispy on the outside, take them out and let the pastries cool before adding cream.
* For Cream
* 1. Whip heavy cream with hand or stand up mixer. Stop once it starts to thicken.
* 2. Add in powder sugar, vanilla, and (optional) chocolate sauce. Mix until peaks start to form.
* 3. Fill pastry bag with cream. Cut the puffs in half and add filling to desired amount.
