1 1/2 lbs. ground beef
salt and pepper to taste
1/ 2tsp. garlic powder
1 cup chopped onion
3 lg. potatoes sliced thin or diced
2 cups carrots sliced thin
1/4 cup celery diced
1/2 cup bell peppers diced
2 cups cooked converted rice (optional)
1 can tomato soup
1 soup can of warm water
1 tsp. Italian seasoning
1/2 tsp. Cajun seasoning
1 1/2 cups shredded cheddar

Directions:

Preheat oven to 350º

Brown beef and season with salt, pepper and garlic powder, drain.

Layer greased 9 x 13 casserole dish with onions on the bottom, then potatoes
.
Top with carrots, celery and bell peppers.

Top with cooked rice, then the fried ground beef.

Whisk together the soup, water and Italian seasoning, pour evenly over beef.

Season top with a light sprinkle of Cajun seasoning.

Cover tightly with foil and bake for 1 hour.

Remove foil and sprinkle with cheese and return to oven till cheese has melted.
