Is there a reason why certain batters should rest before baking?

Yes! When you combine liquid and flour to make a dough or batter, you activate the gluten within the flour. If the gluten doesn't have a chance to rest before baking, your finished product will be tough and chewy. Cookie dough is a great example. Let the dough rest overnight in the fridge and the result is a much more tender cookie.
