¾ cup brown sugar
3 eggs
¼ cup vegetable oil
1 teaspoon vanilla extract
1 (8-ounce) can crushed pineapple, with juice reserved
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1½ cups shredded carrots
1 apple, cored and shredded
¼ cup chopped walnuts

1.Preheat oven to 375 degrees F. Coat a 12-cup muffin tin with cooking spray.
2.In a large bowl, combine brown sugar, eggs, oil, vanilla, pineapple, and reserved juice; whisk until well combined. Add flour, baking powder, baking soda, cinnamon, and salt; whisk well. Fold in carrots, apple, and walnuts; mix well. Evenly divide batter into muffin cups.
3.Bake 20 to 25 minutes, or until a toothpick comes out clean. Enjoy warm, or let cool.
