4 T. Butter divided*
2 lb. Carrots sliced.
1/2 Cup Bourbon*
1/2 Cup brown sugar
1/2 tsp. Kosher salt
Pepper to taste
Fresh Parsley chopped.

Directions:
Directions:
In a large skillet melt 2T. butter over medium-high heat.
Add the carrots and cook for 5-6 minutes stirring frequently.
Place carrots in a bowl and set aside.
Now add the Bourbon and allow to steam for 30 seconds.
add remaining 2 T. butter, brown sugar, salt, pepper and cook until the sauce starts to thicken 2-3 minutes.
Add the carrots and mix until covered with sauce. Reduce the heat to medium and cook for 5-7 minutes.
Carrots are done when a paring knife can be inserted easily.


* You can add more butter to the recipe if needed.

* If you are opening up the bourbon for the recipe you might as well pour yourself a nice Bourbon on the Rocks
