1 lb. hamburg
2 carrots, peeled, and thinly sliced (more if you'd like)
1/2 cup canned corn (or more if you'd like)
1 jar or can Beef gravy
1/4 cup chopped onion
1 clove garlic, minced (optional)

Directions:
Directions:
Brown beef, onion, and garlic (if using). Drain fat. Add carrots and gravy, and simmer on low to med-low until carrots are cooked, stirring frequently. Add corn and heat thru. Serve over mashed potatoes or egg noodles.

Pop liked this served over mashed potatoes, while most of us kids preferred noodles. Over mashed potatoes, it was almost like Shepard's Pie. This was a great way for mom to stretch her food dollars, because it was relatively inexpensive to make.
