½ cup butter
½ cup vegetable oil
1¾ cup sugar
2 eggs
1 tsp vanilla
2½ cups flour
¼ cup cocoa
1 tsp soda
1 tsp salt
½ cup buttermilk or ½ cup milk with 1 T vinegar
2 cups grated zucchini
6 oz chocolate chips
½ - ¾ cup chopped nuts (optional)

Directions:

Cream butter, oil and sugar till fluffy. Beat in eggs one at a time. Add vanilla. Blend dry ingredients , add alternately with 1/2 cup buttermilk ( I never have buttermilk around, in place of I use, 1 T of vinegar or lemon juice to the ½ cup of milk)
Beat well. Stir in the zucchini. Pour into greased 9x13 pan, sprinkle with chocolate chips and chopped nuts. I have made this cake in a well greased and floured bunt pan too. Bake at 325º for 55 minutes.
