1 c. sifted cake flour
1 ½ c. granulated sugar
1 ½ t. cream of tartar
10 egg whites
8, 9 or 10 egg yolks
1 t. vanilla extract
½ t. almond extract

Directions:
Directions:
Sift ½ cup of sugar, the flour and the cream of tartar onto wax paper and repeat the sifting 3 times.

Beat egg whites until stiff but not dry. Gradually add 1 c. sugar until blended and it peaks. Beat the egg yolks until uniformly yellow and fold in, carefully, into the beaten egg whites.

Add sifted flour, sugar and cream of tartar, folding in SMALL amounts at a time until blended.

Pour into an ungreased tube pan and bake at 300º for one hour until golden brown. It MUST be golden brown so bake up to 5 minutes more to assure it, so it doesn't drop out of the pan.

Invert the cake in the pan onto a plate and let cool. Gently loosen the sides with a knife until it comes out of the tube pan.
