"I know they never had a recipe for anything. They made city chickens with pork and veal cubes, placed on a wooden skewer stick. My mom rolled hers in flour, salt and pepper, then browned them in a skillet with shortening.

Put them in a roasting pan with some water so they don't burn (I use chicken broth)
Bake at 375 'til they are done, usually at least 2 hours."

Ruth used the flour mix, not eggs and crackers crumbs, as some do.

I don't generally eat veal or pork, but I make exceptions for this! The favorite birthday dinner!
