⅔ cup of wild rice (I have used 1 box of instant Uncle Ben's rice without the seasoning packet)
2 cups chicken broth
½ lb of bacon (browned)
½ cup chopped onion
½ cup chopped celery
½ cup chopped carrots
1 quart milk
2 cup Velveeta (cut up)
2 cans cream of potato soup
1 whole chicken breast cut in smaller pieces cooked

Directions:

Cook rice as instructed on box using chicken broth instead of water. (If using traditional wild rice, rinse and drain rice. then boil the chicken broth, add rice and simmer for 45 minutes, do not boil dry.)
In fry pan, brown bacon and remove from grease. Saute the following in bacon grease: onion, celery and carrots. This takes only a few minutes until tender. toss all above in crock pot. Add milk, Velveeta cheese and soups. Heat for 2-3 hours. May need to add additional broth depending on preferred thickness.
