1/2 c butter, softened
1 c packed brown sugar
1 egg
1/4 c soured milk
1 3/4 flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c sweetened flaked coconut

Directions:
Directions:
Preheat oven to 400º. Mix butter and sugar thoroughly in mixing bowl. Stir in slightly beaten egg. Stir in milk. Stir together flour, soda, and salt. Add to wet ingredients and stir until combined. Cover. Chill 1 hour. Drop tablespoons of dough 2 inches apart on parchment lined baking sheets. Bake about 8 minutes or until cookies are golden brown, rotating pan halfway through. Makes about 42 2 1/2 cookies.

This recipe is slightly adapted from the much splattered Betty Crocker cookbook we grew up using on the Sabelka farm. I think we used lard when Mom first taught me to make this recipe. I use butter these days. This version is also half of the original recipe. I remember routinely quadrupling the recipe back on the farm. Lots of people eating cookies in those days.
