1 white potato, pared & sliced
1 sweet potato, pared & sliced
1 green pepper, sliced into bite size pieces
1 red pepper, sliced into bite size pieces
5 large carrots, pared & sliced
3 zucchinis, sliced
1 onion, sliced into bite size pieces
¼ cup olive oil
1 tsp. thyme
1 tsp. rosemary
½ tsp. basil
1 tsp. salt
½ tsp. pepper

Directions:
Directions:
Mix together oil and seasonings. Put vegetables in large bowl and toss with oil mixture. Put lid on bowl and marinate several hours or overnight in the refrigerator. When ready to roast, line with foil a 9x13 metal pan or baking sheet with sides. Roast in oven for 1 hour at 400 degrees. Stir vegetables half way through the roasting time.
