1 whole chicken
3 lemons
3 tbsp. of dried Rosemary
1 head garlic
1 tbsp. butter

Directions:
Directions:
Wash the chicken and stuff with 1 lemon, quartered, rosemary and garlic.

Rub the chicken with salt and butter

Roast at 375 degrees for at least 1 hour (usually 1 1/2 hours) until juices run clear. Let rest for 15 minutes. Garnish with sliced lemons and whole sprigs of Rosemary, if you have some.
Carve.

This is Michon's favorite all season roast chicken. It's good with homemade chutney. Save the pan juices for making a sauce to serve with the chicken or to use later. The day after making this dish, I often boil the carcass with any chicken remaining on the bone, plus the pan juices, to make a good stock.
